STUFFED ACORN SQUASH 
3 to 4 baked acorn squash
3 tbsp. chopped onion
2 tbsp. butter
1/2 c. soft, fresh bread crumbs
1/4 c. water
1 egg
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. dry bread crumbs
3 tbsp. butter

Remove cooked squash from shells (save shells) and mash. Brown onion in butter. Soak soft crumbs in water, mash and add to onion. Add squash and cook 15 minutes, stirring occasionally. Stir in egg. Add salt and pepper. Place this mixture in shells, sprinkle with bread crumbs and dot with butter. Bake at 375 degrees about 20 minutes or until browned. Serves 6 to 8.
