STUFFED ACORN SQUASH | |
3-4 baked acorn squash 3 tbsp. chopped onion 2 tbsp. butter 1/2 c. soft bread crumbs 1/4 c. water 1 egg 1/2 tsp. salt 1/8 tsp. pepper 1/2 c. dry bread crumbs 3 tbsp. butter Remove squash from shells and mash. Brown onion in butter. Soak soft bread crumbs in water and add to onion. Add squash and cook 15 minutes, stirring occasionally. Stir in egg. Add salt and pepper; place mixture into squash shells. Sprinkle with bread crumbs and dot with butter. Bake in moderate oven (375 degrees) about 20 minutes or until browned. Serves 6 to 8. |
