STUFFED ACORN SQUASH | |
3-4 baked acorn squash 3 tbsp. chopped onion 2 tbsp. fat 1/2 c. soft bread crumbs 1/4 c. water 1 egg 1/2 tsp. salt 1/8 tsp. pepper 1/2 c. dry bread crumbs 3 tbsp. butter Remove squash from shells and mash. Brown onion in fat; soak soft crumbs in water. Mash and add to onion. Add squash and cook about 15 minutes, stirring occasionally. Stir in egg. Add salt and pepper; place mixture in squash shells. Sprinkle with bread crumbs and dot with butter. Bake in moderate oven (375 degrees) about 20 minutes or until browned. |
