ARTICHOKE RICE SALAD 
1 pkg. chicken flavored rice, mix, cool, no butter
4 green onions, sliced thinly
1/2 chopped green pepper (optional)
12 pimento stuffed olive, sliced
2 (6 oz.) jars marinated artichoke hearts
3/4 tsp. curry powder
1/3 c. mayonnaise

Prepare rice and cool. Add onions, green pepper, and olives. Drain artichokes reserving liquid. Add curry powder and mayonnaise to liquid. Add hearts and dressing to rice. Toss and chill.
