HUNTER'S PORK 
3-4 lb. pork roast
1/4 lb. bacon slices, cut into pieces
A couple sprigs of thyme (or tsp. dried thyme)
1 tbsp. juniper berries, crushed
Salt and pepper
12 oz. fresh mushrooms, sliced

Cut the roast into thick slices without cutting all the way through. Place it in roasting pan and place the bacon, juniper berries and mushrooms between the slices. Sprinkle with salt and pepper. Place thyme sprigs on top and roast for about 2 hours at 350 degrees. Serve with oven baked potatoes and a green salad.
