18 Ritz crackers, rolled fine
2/3 c. chopped pecans
1 c. sugar
3 egg whites
1/2 tsp. baking powder
1 tsp. vanilla
1 c. heavy cream, whipped & unsweetened or use Cool Whip

Beat egg whites after adding baking powder; add sugar to egg whites and continue beating until stiff; fold in vanilla, crumbs and nuts.

Bake in a greased 9 inch pie pan or 9 x 9 inch square pan at 325 degrees for 35-40 minutes.

Top with whipped cream or Cool Whip. Shaved chocolate or coconut may be added, if desired.

If the pie is made in advance of serving, it should be chilled in the refrigerator and the whipped cream should be added just before serving.
