SEAFOOD AU GRATIN | |
1 stalk celery, chopped fine 1 c. onion, chopped fine 1/4 lb. butter 1/2 c. flour 1 (12 oz.) can evaporated milk 2 egg yolks 1/2 tsp. salt or to taste 1/4 tsp. black pepper 1/2 tsp. red pepper 1 lb. white crab meat 1 lb. peeled and deveined shrimp 1/2 lb. grated Cheddar cheese Saute onions and celery in butter until wilted. Blend flour in well, add shrimp and stir until pink. Pour in milk gradually, stirring constantly. Add egg yolks, salt, red and black pepper; cook for 5 minutes. Add crab meat and blend well. Transfer into lightly greased casserole and sprinkle with grated Cheddar cheese. Bake at 375 degrees for 15 or 20 minutes or until cheese is melted and light brown. Serves 8. |
