SPINACH ORANGE SALAD 
1/2 head lettuce
2-4 sliced green onions
1/2 c. caramelized pecans
1 can mandarin oranges, drained
1/2 lb. spinach
2 tbsp. parsley, chopped

To caramelize pecans, stir 1 tbsp. sugar with pecans over low heat to coat.

Mix spinach, lettuce, onions and parsley. Chill. Add nuts, oranges and dressing just before serving.

DRESSING:

1/2 c. oil
1 tbsp. sugar
1/2 tsp. salt
2 tbsp. vinegar
1/2 tsp. pepper

Mix in a jar and chill.
