SPINACH-ORANGE SALAD 
3 c. torn spinach
3 c. torn lettuce
1 (11 oz.) can mandarin orange sections, drained
1 sm. red onion, thinly sliced
Oil-Free Salad Dressing

In a salad bowl combine spinach, lettuce, orange sections, and onion. Add the Oil-Free Salad Dressing. Toss to coat. Makes 6 servings.

OIL-FREE SALAD DRESSING:

1 tbsp. powdered fruit pectin
1/2 tsp. sugar
1/4 tsp. dried basil, crushed
1/8 tsp. dry mustard
1/8 tsp. garlic powder
1/4 c. water
1 tbsp. red wine vinegar

Combine pectin, sugar, basil, mustard and garlic powder. Stir in water and vinegar. Cover and chill at least 1 hour before using. Store any remaining dressing in the refrigerator or up to 3 days. Makes 6 (4 teaspoon) servings.
