MRS. BUTCHER'S PATACONES 
Green plantains
Cooking oil
Salt

Peel plantains and slice in half inch thick pieces. Fry them in hot oil for 5 minutes. Remove from oil and flatten them with a glass or bottle. Refry until crisp. Add salt to taste. Serve warm.

Having lived in Panama for two years, I learned this recipe. These are so good. The older the plaintain, the sweeter they are. The oil has to be very hot. So yummy.
