BARBECUE BRISKET 
5-7 lb. brisket

Place brisket in deep pan. Cover with aluminum foil and bake in a 200 degree oven for about 12 hours (I bake it overnight). When cooled, run a fork across meat and it will separate into strings. Pour prepare sauce over meat and bake uncovered for 30 minutes.

SAUCE:

Simmer 30 minutes. Saute large onion in 4 tablespoons butter.

Add:

1/2 c. water
1/2 c. lemon juice
3 tsp. dry mustard
2 c. ketchup
6 tbsp. Worcestershire sauce
2 tsp. salt
4 tbsp. vinegar
4 tbsp. brown sugar
2 tsp. liquid smoke
Dash of Tabasco

This is an old Smith family recipe and it is delicious!!
