STUFFED SHELLS 
1/2 lb. sweet Italian sausage, skinned
1/2 c. chopped onion
1/4 c. green pepper
1 (29 oz.) can tomato sauce
1/4 tsp. salt
1/2 tsp. oregano
1/2 tsp. basil
2 c. ricotta cheese
1 c. shredded Mozzarella cheese
1 c. Parmesan cheese
1 egg
22 jumbo shells, cooked
1/4 c. Mozzarella cheese for top

Brown sausage with onion and green pepper. Drain fat. Stir in tomato sauce and seasonings. Boil uncovered at least 15 minutes. Combine all cheese and egg. Mix well. Fill shells with cheese mixture. Pour half the sauce in 13 x 9 baking dish. Place shells in dish, cover with remaining sauce. Top with 1/4 cup Mozzarella cheese. Cover. Bake at 350 degrees for 30 minutes.
