FISH WRAP - UP 
2 lbs. flounder (8 to 10 fillets)
Shredded Colby cheese
2 med. zucchini, leave skin on), 1/2 inch slices
Fresh mushrooms, sliced
2 med. tomatoes, remove skin and seeds, chop
1 1/2 tsp. basil
1/8 tsp. garlic powder
2 tbsp. butter
Salt, pepper, paprika

Sprinkle cheese down centers of washed and dried fillets. Roll up, starting with narrow end. Place, seams down, in center of large baking dish (oblong). Arrange veggies around fish. Sprinkle seasonings over all. Dot fish with butter. Microwave on high for 12 minutes or crumble and dampen sheet of wax paper. Lay over casserole contents, keeping edges inside sides of dish. Cover dish tightly with foil. Bake in convection oven at 350 degrees for 40 to 45 minutes. Serve with lemon wedges.

Since microwave ovens vary in power, you may need to adjust your cooking time.
