SWEET POTATO MALLOW 
1 lb. sweet potatoes or yams, about 3 med.
1/2 c. dairy sour cream
1 egg yolk
1/2 tsp. salt
1/4 tsp. ground mace
3/4 c. miniature marshmallows

To cook sweet potatoes: Bring to boil enough salted water (1/2 teaspoon salt to 1 cup water), to cover potatoes. Add potatoes and bring to boil again. Cover and cook until tender, about 30 to 35 minutes. Drain. Slip off skins.

Beat sweet potatoes, sour cream, egg yolk, salt and mace in small mixing bowl on medium speed until smooth. Pour into buttered 1 quart casserole and top with marshmallows. Cook uncovered in 350 degree oven until marshmallows are golden brown, about 30 minutes. Makes 4 big servings.
