MRS. K.'S MOCHA CHOCOLATE CHIP CHEESECAKE | |
1 1/2 c. chocolate wafer crumbs (24 wafers) 6 tbsp. (3/4 stick) butter, room temperature 1/3 c. sugar 1 1/2 lbs. cream cheese, room temperature 1 c. sugar 4 eggs, room temperature 1/3 c. whipping cream 1 tbsp. instant coffee powder 1 tsp. vanilla 1 c. miniature chocolate chips Position rack in center of oven and preheat to 200 degrees. Butter bottom and sides of 9 1/2 inch spring-form pan. Combine crumbs, butter, and 1/3 cup sugar; mix well. Pat into bottom and sides of pan. Set aside. Beat cream cheese in large bowl until fluffy. Blend in 1 cup sugar. Add eggs, 1 at a time, beating well after each. Add cream, coffee, and vanilla; beat 2 minutes. Put in crust. Top with chips and swirl through with a spatula. Set pan on baking sheet. Bake 2 hours and 15 minutes. Cool, then chill. Absolutely delicious! |
