LUNCHEON TOSTADA SALAD 
1 lb. ground beef
1 pkg. taco seasoning mix
3/4 c. water
3/4 tsp. seasoned salt
1 can (14 oz.) red kidney beans (drained)
4 tomatoes, cut in wedges
1 avocado, cut in slices
1 pkg. (6 1/4 oz.) tortilla chips
1 head lettuce (torn in sm. pieces)
4 oz. cheddar cheese (grated)
1 c. chopped onions
3/4 c. thousand island dressing

Brown the ground beef; drain fat. Add the taco seasoning mix, water, seasoning salt and beans. Cover; simmer for 10 minutes. Reserve some of the tomato wedges, avocado slices and tortilla chips for use as a garnish. Combine all of the remaining ingredients in a large salad bowl; add ground beef mixture and lightly toss all of the ingredients. Garnish with the reserved tomatoes, avocados and tortilla chips. This salad is best served immediately. Serves approximately 8.
