MANDARIN-AVOCADO SALAD 
Red leaf and Boston lettuce, torn in pieces, equivalent to a head of lettuce
1 cucumber, thinly sliced
1 ripe avocado, seeded, peeled and sliced
1 (11 oz.) can mandarin oranges, drained
2 tbsp. sliced green onions

Combine in large bowl.

DRESSING:

1/2 tsp. grated orange peel
1/4 c. orange juice
1/2 c. salad oil
2 tbsp. sugar
2 tsp. red wine vinegar
1 tbsp. lemon juice
1/4 tsp. salt; optional

In a jar, combine ingredients. Cover tightly, shake well and chill. Just before serving, pour dressing over salad.
