HALIBUT OLYMPIA | |
1 1/2 to 1 3/4 lb. halibut filet (skinless, boneless) 2 shallots, minced Dash of white wine Juice of half a lemon 1 c. mayonnaise 1/4 c. melted butter White bread crumbs Preheat oven to 375 degrees. Pour enough melted butter in the bottom of a casserole dish to coat the bottom. Pour off excess - reserve. Sprinkle minced shallots over butter in casserole. Diced onions may be substituted. Cut halibut into bite size pieces and arrange in casserole on top of onions. Season fish with white wine and lemon juice. Spread mayonnaise on top of halibut, use a rubber scraper, or a pastry bag for decorative effect. Combine bread crumbs with reserved excess melted butter and sprinkle on top of mayonnaise. Bake for 15 to 20 minutes until top is golden brown and fish is cooked in center. Drain excess butter and serve. |
