APPLE CAKE WITH BUTTERSCOTCH
TOPPING
 
1/2 c. butter
2 c. sugar
4 eggs
2 c. sifted flour
1/2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. chopped walnuts
1 c. raisins
6-8 peeled and thinly sliced apples (about 4 c.)

Heat oven to 350 degrees. Grease and flour a 9x13 inch pan.

Cream butter and sugar together. Add eggs and mix until smooth. Add dry ingredients. Fold in apples and walnuts and raisins. Batter will be thick. Pour into pan. Bake 45-55 minutes.

TOPPING:

1 c. brown sugar
1 c. white sugar
1/2 c. butter
1 c. half & half or light cream

Mix all. Bring to boil, stirring constantly. Remove from heat and add 1/4 teaspoon baking soda. Mixture will bubble and frothy. Pour over squares of warm or cooled cake. Serve.
