ROAST GUINEA HEN 
1 guinea hen
Stuffing
1/4 lb. salt pork

Clean hen and lard with salt pork. The market will do this, if requested. Fill with stuffing. Close opening and truss. Place breast side down in an uncovered roaster. Roast in oven (350 degrees) until tender, about 2 hours. Roast with breast down half of the time, turn and cook remaining time with breast up. Baste at half-hour intervals. One guinea hen serves 2 or 3.
