MARTY'S APPLE CAKE 
4 cups peeled, diced apples
2 cups sugar
1 cup chopped nuts
1/2 tsp. nutmeg
1 tsp. cinnamon
2 tsp. baking soda
3 cups all-purpose flour
1/2 tsp. salt
1 cup oil
1 tsp. vanilla extract
2 eggs, well beaten

Mix together apples, sugar and nuts in a mixing bowl; let stand for 1 hour, stirring often.

Preheat oven to 350°F.

Add the dry ingredients to the apples, mixing well. Then add oil, vanilla and eggs; mix well. Pour batter into a greased and floured tube pan.

Bake at 350°F for 1 hour.
