TURKEY NOODLE SOUP 
Turkey carcass
3 ribs celery, sliced
2 carrots, sliced
1 lg. onion, quartered
2 cloves garlic, minced
1 bay leaf
1 1/2 tsp. salt
1 tsp. pepper
1/2 tsp. ground cloves
1/2 tsp. marjoram
1/2 tsp. rosemary flakes
1/8 tsp. paprika
10 c. water
1 1/2 c. egg noodles

Break turkey carcass and place in Dutch oven; add remaining ingredients, except noodles. Bring to a boil over high heat. Reduce heat to low; cover and simmer 2 hours. Remove carcass, cool. Remove turkey from bones. Put turkey back into broth and bring to a boil again. Add noodles and cook until tender.

This soup always gets great lauds at our home! They lament that I only make it once a year (After Thanksgiving). I boil the carcass in water only, remove carcass, strain; Then I cool the water, skim desired fat from top; then reboil the water with the other ingredients. That intensifies the flavor of the spices... not boiling them to "death" over and over. :) I also use 'home-style' noodles like "Country Pasta" from Costco... Don't have time to make them myself, but the store bought ones are really good, and more 'substantial'/filling.
