ZUCCHINI BREAD 
2 1/2 c. sugar
3 eggs
1 c. oil
2 c. grated, peeled zucchini
2 tsp. vanilla

3 c. flour
1 tsp. salt
3 tsp. cinnamon
1/2 tsp. baking powder
1/2 c. nuts, raisins or crushed, drained pineapple

Mix all the above ingredients together and bake at 325 degrees for 1 hour. Yield is 2 bread tins.
