HEALTHY ZUCCHINI BREAD 
1 c. whole wheat flour
1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 egg
1/4 c. sugar
1 tsp. vanilla extract
2 1/2 tbsp. butter, melted
1 1/2 c. finely shredded zucchini, stem ends trimmed, but not peeled
1/2 c. raisins

Preheat oven to 350 degrees. In large bowl mix whole wheat and all purpose flours, baking powder, baking soda, cinnamon and nutmeg. In smaller bowl combine eggs, sugar, vanilla and melted butter. Add zucchini and raisins.

Stir wet mixture into flour mixture until just moistened. Pour batter into lightly greased loaf pan. Bake 45-50 minutes. Cool on rack. Makes 1 loaf.
