ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
2 c. sugar
2 c. grated zucchini (1 med. size)
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1/2 tsp. baking powder
1/2 c. chopped nuts or raisins

Beat eggs; add oil, sugar, zucchini and vanilla; mix well. Add flour, baking soda, baking powder, salt and cinnamon. Blend then add nuts or raisins. Bake in 2 loaf pans or tube pan for 1 hour at 325 degrees.
