ROGALACH (LIKE KOLACHKE) COTTAGE
CHEESE DOUGH
 
DOUGH:

1 c. butter (2 sticks)
1 c. cottage cheese
2 tsp. vanilla
2 c. flour (more if needed)

Blend and refrigerate overnight.

FILLING:

1 c. sugar
1 c. ground nuts
1/2 to 1 tsp. cinnamon (optional)
6 tbsp. mini chocolate chips (optional)

Form dough into 4 balls. Roll one at a time in circles - 1/4 to 1/8 inch thick. Spread dough with thin layer of apricot or raspberry jam. DO NOT SPREAD ON CENTER OF DOUGH. Sprinkle filling over jam. Cut circle into triangles and roll, starting at wider end. Sprinkle cookie sheets with Pam spray, lightly. Place regalach on sheets. Brush tops with thin layer of butter (or egg wash). Sprinkle with mixture of sugar and cinnamon. May be frozen. Bake at 350 degrees till properly browned.
