ELEGANT CHOCOLATE CAKE 
2 1/2 c. sifted cake flour
1 tsp. baking soda
1 c. butter
1 lb. light brown sugar
1 tsp. vanilla
3 eggs, slightly beaten
2 squares unsweetened chocolate, melted & cooled
1 c. milk

Sift flour with soda. Cream butter until softened. Add sugar gradually, creaming until light and fluffy. (This takes 10 minutes with an electric mixer.) Beat in vanilla, then add eggs, one at a time, beating well after each. Stir in chocolate. Alternately add flour and milk, beating after each addition until smooth.

Pour batter into 3 (8") pans, lined on bottoms with wax paper, and greased and floured. Bake at 350 degrees for 30 to 35 minutes. This cake can also be baked in 2 (8") pans for about 35 minutes.
