ELEGANT PUMPKIN CAKE 
2 c. flour
2 c. sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
2 sm. boxes dry coconut pudding mix (not instant)
1 c. chopped pecans
5 eggs
1 c. cooking oil
1 (16 oz.) can pumpkin
1/2 tsp. coconut flavoring
1 tsp. vanilla

Preheat oven to 325 degrees. In large mixing bowl combine flour, sugar, salt, cinnamon, nutmeg, soda, dry pudding mix and pecans; mix well. In large electric mixer bowl beat eggs until thick and lemony. Add oil, pumpkin, coconut flavoring and vanilla. Beat well. Fold in mixed dry ingredients.
