OAT BURGERS PARMIGIANA | |
1 tbsp. plus 1 tsp. vegetable oil 1 1/2 c. finely chopped onions 2 cloves garlic, finely chopped 2 c. rolled oats (6 oz.) 1/4 c. plus 2 tbsp. wheat germ (1 1/2 oz.) 1/4 c. plus 2 tbsp. whole wheat flour 1 1/2 tsp. dried oregano 1 tsp. dried basil Salt and pepper to taste 1 2/3 c. water 6 oz. shredded or sliced part skim Mozzarella cheese 1 (15 oz.) jar meatless spaghetti sauce Heat oil in large nonstick skillet over medium heat. Add onions and garlic. Cook, stirring frequently, until onions start to brown; about 10 minutes. Preheat oven to 350 degrees. Lightly oil a baking sheet or spray with a nonstick cooking spray. In a large bowl, combine oat, wheat germ, flour and spices. Mix well. Add water and cooked onions. Mix until well combined. Make six patties by pressing mixture into a 1/2 cup measuring cup and inverting into prepared pan. Flatten burgers slightly to 3 1/2 inches in diameter. Bake 25 minutes. Divide cheese evenly and place on burgers. Return to oven for 5 minutes. While burgers are baking, heat sauce. To serve, place burgers on plate and top with 1/3 cup of hot sauce. |
