TURKEY AU GRATIN 
1 stalk celery, sliced
1 med. onion, chopped
2 tbsp. butter
2 c. milk
1 c. quick cooking rice
1 1/2 c. diced cooked turkey
10 1/2 oz. can condensed cream of mushroom soup
1 c. herb seasoned stuffing mix
1 c. shredded cheddar cheese (4 oz.)
4 oz. can green chili peppers, rinsed, seeded and chopped (optional)

In a 2 quart microwave safe casserole, combine celery, onion, and butter. micro-cook covered on 100 percent power (high) for 2 to 3 minutes or until onion is tender. Add milk. Micro-cook, covered on high 4 to 6 minutes or until steaming and foamy but not boiling. Stir in uncooked rice. Let stand covered 2 minutes. Stir in turkey, condensed soup, stuffing mix, half of cheese, and, if desired, chili peppers. Micro-cook on high, stirring once. Sprinkle with remaining cheese. Let stand until cheese is melted. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
