TURKEY AU GRATIN | |
1 stalk celery, sliced 1 med. onion, chopped 2 tbsp. butter 2 c. milk 1 c. quick cooking rice 1 1/2 c. diced cooked turkey 10 1/2 oz. can condensed cream of mushroom soup 1 c. herb seasoned stuffing mix 1 c. shredded cheddar cheese (4 oz.) 4 oz. can green chili peppers, rinsed, seeded and chopped (optional) In a 2 quart microwave safe casserole, combine celery, onion, and butter. micro-cook covered on 100 percent power (high) for 2 to 3 minutes or until onion is tender. Add milk. Micro-cook, covered on high 4 to 6 minutes or until steaming and foamy but not boiling. Stir in uncooked rice. Let stand covered 2 minutes. Stir in turkey, condensed soup, stuffing mix, half of cheese, and, if desired, chili peppers. Micro-cook on high, stirring once. Sprinkle with remaining cheese. Let stand until cheese is melted. Serves 6. |
