OATMEAL COOKIES 
4 sticks butter, softened
2 c. dark brown sugar
1 c. granulated sugar
7 to 8 c. old fashioned oatmeal
3 c. raisins
2 to 3 c. chopped walnuts
3 c. whole-wheat flour*
1/2 tbsp. applesauce
1 1/2 tbsp. vanilla
1/2 c. chocolate chips
2 tbsp. crunchy peanut butter
2 tsp. baking soda
1 1/2 tbsp. cinnamon
4 eggs

Mix all together; dough will be sticky, but in a ball. Drop by rounded spoonfuls onto ungreased cookie sheet and bake at 350°F for 8 to 11 minutes. Rotate sheets halfway through baking time. Careful not to burn bottoms. Cookies will harden as they cool.

*Can substitute 2 cups whole-wheat flour and 1 cup regular flour for the 3 cups whole-wheat flour.
