FILLING: 3 oz. cream cheese 6 oz. feta or greek cheese, crumbled 10 oz. Monterey Jack cheese, grated 3 eggs 1/2 c. minced parsley 2 tbsp. flour 2 tbsp. corn oil or melted butter DOUGH: 1 lb. filo dough 1/2 lb. melted butter Combine all the filling ingredients together in a bowl, mixing well; set aside. Brush a 12x17 inch baking pan with melted butter. Layer 1/2 the dough into the pan brushing every other layer with the butter and folding in the edges as needed. Spread the filling over the layers. Then continue layering and buttering in the same way until all the dough is used. Brush the top layer with butter. Cut into 3 inch squares. Bake at 350 degrees, about 30 minutes or until golden brown. Cut through the squares once more and serve hot. Yield: 12 servings. |
