POTATO CASSEROLE 
1 can cream of chicken soup
1/4 c. sour cream
2 tbsp. chopped onion
1 1/2 c. shredded cheese
8 med. potatoes, boiled in jackets with a bay leaf and salt

May be prepared up to a week ahead. Peel and shred potatoes. Put in a buttered 9 x 13 inch baking dish. Mix all ingredients and spread on top of potatoes. This step can be done up to a day ahead. Then bake at 350 degrees for 30 minutes. May top with crumbs and bake 5 additional minutes.
