ZUCCHINI BREAD 
3 eggs, well beaten
1 c. oil
2 c. sugar
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 1/2 c. plain flour
2 c. unpeeled zucchini, grated
1 c. grated carrots
1 c. chopped pecans

Preheat oven to 350 degrees. Beat together the eggs, sugar, oil, cinnamon, and vanilla. Combine the salt, soda, baking powder, and flour. Add dry ingredients to liquid ingredients. Add zucchini and carrots and mix well. Add nuts. Pour into 2 greased loaf pans. Bake at 350 degrees for 45-60 minutes. May glaze, if desired.
