SWEET POTATO CASSEROLE 
3 c. cooked and mashed sweet potato
1 c. sugar
1/2 c. butter, melted (save 2 tbsp. for topping)
2 eggs, beaten
1 tsp. vanilla
1/3 c. milk

Topping:

1/2 c. brown sugar
1/4 c. flour
2 tbsp. butter, melted
1/2 c. chopped nuts

Combine mashed sweet potato, sugar, butter, beaten eggs, vanilla and milk. Spoon into 2-quart casserole. Combine topping ingredients and cover sweet potato mixture.

Bake at 350°F for 25 minutes.
