COCONUT LAYER CAKE 
1 1/2 c. sugar
1 c. butter
4 eggs, separated
2 c. flour
3 tsp. baking powder
Pinch of salt
1 c. light cream
1 tsp. vanilla

Cream sugar and butter; add egg yolks, one at a time, beating well after each addition. Sift flour, baking powder and salt together; add to creamed mixture alternately with cream and vanilla. Fold in stiffly beaten egg whites; place in 2 greased layer pans. Bake at 350 degrees for 25 to 30 minutes. Frost with coconut frosting or chocolate fudge frosting.
