CORN FRITTERS 
1 c. corn (fresh, frozen or canned)
2 eggs, beaten until light
6 tbsp. flour
1/2 tsp. baking powder
1/8 tsp. nutmeg
1/2 tsp. salt
3 tbsp. butter

Beat eggs until light. Add corn, flour, baking powder and spices. Melt 3 tablespoons butter in skillet. When very hot, add batter by tablespoon. Brown on both sides and serve warm.
