SWISS STEAK 
2 lb. beef (round or chuck), 1 inch thick
1/2 c. flour
2 tsp. salt
1/2 tsp. pepper
1/2 c. Crisco
1/2 c. onion, sliced
1 1/2 c. tomatoes, canned

Rub meat with seasoned flour. Pound flour into meat with a meat hammer or back of a heavy knife. Brown meat and onion in Crisco in a heavy skillet or Dutch oven. Add tomatoes, cover and cook over low heat until steak is tender, 1 hour or longer.
