CARROT CAKE 
2 c. grated carrots
1 sm. can crushed pineapple
3 eggs
1 1/2 c. cooking oil
2 c. sugar
3 c. flour
1/2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 c. chopped nuts
1 c. coconut

Mix together carrots, pineapple, eggs and cooking oil. Sift together flour, sugar, salt, soda and cinnamon. Add dry ingredients to liquid mixture. Add nuts and coconut. Grease pan generously and flour lightly. Glaze while hot; recipe follows.

GLAZE:

1 (3 oz.) pkg. cream cheese
3 tbsp. butter
1/2 pkg. powdered sugar
1 1/2 tsp. vanilla
Milk, enough to make as thick or thin as desired

Mix well, glaze hot cake.
