CHINESE PASTA SALAD 
6 oz. rotini pasta, cooked and drained
1/4 c. Sesame seeds
3 c. cooked chicken breasts, shredded
1/2 c. chopped green onion
8 c. chopped fresh spinach
1/2 c. oil
1/2 tsp. salt
1/3 c. rice vinegar
1/4 tsp. pepper
3 tbsp. sugar

Mix together pasta, seeds, chicken and green onion. Mix in a bowl oil, vinegar, sugar, salt and pepper; pour over pasta. Just before serving add chopped spinach. Handy tip: this is a versatile recipe in that you can increase the pasta, decrease the chicken or omit meat all together. Broccoli can also be substituted for spinach. Serves 8 to 10.
