CHICKEN VERDE | |
6 split chicken breasts, boneless, skinless, cut into lg. chunks 1 1/2 bunch green onions, chopped 1 tbsp. Polander's chopped garlic 2 cans chicken broth 2 (10 oz.) frozen leaf spinach 2 tbsp. flour 2 tbsp. olive oil 1/2 tsp. J.D.'s Vegetable Magic 1/2 tsp. Cajun seasoning 1/2 tsp. lemon pepper 6 oz. white wine (optional) 6 fresh basil leaves, chopped 1/2 c. fresh parsley, chopped In saucepan, heat olive oil and add green onions and garlic. Saute two minutes and add flour. Stir continuously for one minute to coat vegetables. Add chicken broth and cook 5 minutes on medium heat. Add vegetable magic, Cajun seasoning, lemon pepper, parsley, white wine and chicken. Cover and cook on medium heat for 20 minutes. Add fresh basil and spinach, lower heat and cook for 10 minutes. Serve over angel hair pasta and top with Parmesan cheese if desired. |
