PINEAPPLE UPSIDE DOWN CAKE | |
1/2 c. butter 1 c. brown sugar 1 can sliced pineapple, 10 slices, drained 1 c. flour 1 tsp. baking powder 3 eggs, separated 1 c. sugar 5 tbsp. pineapple juice Melt butter in a heavy skillet. Add brown sugar and spread evenly on bottom. Set the pineapple slices on the sugar. Combine flour and baking powder. In a bowl, beat egg yolks until very light. Add sugar gradually. Add pineapple juice and flour, mixing well. Beat egg whites until very stiff and fold into egg yolk mixture. Pour batter over pineapple slices in skillet and bake at 375 degrees for 30 to 40 minutes. Invert onto a cake plate after about 5 minutes. To fancify put maraschino cherries and nuts between and in center of pineapple slices. |
