PINEAPPLE UPSIDE DOWN CAKE 
1/4 lb. butter
1 c. brown sugar
1 (20 oz.) crushed pineapple, drained
3 eggs
1 c. sugar
5 tbsp. pineapple juice
1 c. flour
1 tsp. baking powder

Melt butter in 10-inch heavy fry pan (cast iron), add brown sugar. Spread drained pineapple over this. Beat egg yolks, add sugar, juice, flour sifted with baking powder. Fold in beaten egg whites. Pour over first mixture and bake in 350 degree oven for 1 hour. When done, place cake plate on top and reserve. Serve with ice cream or whipped cream.
