PINEAPPLE UPSIDE DOWN CAKE 
Place 1 cube of butter in the bottom of a 13x9x2 inch cake pan. Place in 350 degree oven to melt. When butter has melted sprinkle brown sugar over the butter about 1/2 inch thick. Place slices of pineapple on the brown sugar, then 1 maraschino cherry inside each pineapple ring and set aside.

FLUFFY YELLOW CAKE:

1 c. shortening
2 c. sugar
4 egg yolks
1 tsp. vanilla
3 c. flour
1/4 tsp. salt
3 tsp. baking powder
1 c. milk
4 stiff beaten egg whites

Thoroughly cream shortening and sugar. Add egg yolks and vanilla; beat well. Add sifted dry ingredients alternately with milk. Fold in egg whites. Pour cake batter over butter, brown sugar and pineapple. Bake in moderate oven.
