ITALIAN MEATLOAF 
2 lbs. ground beef
2 c. seasoned bread crumbs
1/2 c. chopped onion
1/4 c. grated Parmesan cheese
2 eggs, slightly beaten
1 tsp. salt
1/4 tsp. pepper
1 (8 oz.) can tomato sauce

Combine meat, bread crumbs, onion, Parmesan cheese, eggs, sauce, and seasonings; mix lightly. Press mixture into a 13x9 inch pan. Bake at 350 degrees for 30 minutes.

Pour off drippings. Pour 8 ounce can of sauce over meatloaf plus 1 cup Mozzarella cheese. Continue baking 30 minutes. Serves 8 to 10.
