ZUCCHINI ROUNDS 
1/2 c. pkg. biscuit mix (Jiffy)
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
2 beaten eggs
2 c. unpared shredded zucchini (2 med.)
2 tbsp. butter

In mixing bowl, stir together biscuit mix, cheese, pepper. Stir in beaten eggs just until mixture is moistened. Fold in zucchini. Melt butter in skillet over medium heat. Fry on both sides until brown. Keep warm while cooking remainder of batter. A good meat substitute.
