FISH FLORENTINE 
2 pkg. chopped spinach
4 tbsp. chopped onion
2 tsp. salt
1/2 tsp. pepper
4 tbsp. oil
2 tbsp. butter
1 1/4 tbsp. flour
1 c. milk
4 tbsp. dry vermouth
1 lb. fish fillets, cut into serving pieces
1 c. grated cheese

Place spinach, cooked and drained, in greased casserole. Sprinkle with onion, salt, pepper, and oil. Make sauce out of next 4 ingredients. Place fillets over spinach. Pour sauce over all. Sprinkle with cheese. Bake at 350 degrees for 45 minutes. Serves 4-6.
