CHICKEN - BROCCOLI CASSEROLE 
2 c. cooked rice
1 to 3 lbs. chicken, cooked & cut up
2 (10 oz.) pkgs. cooked & drained broccoli
1 can cream of mushroom soup
1/2 c. mayonnaise
1/2 c. Velveeta cheese, sliced
1 can French onions
1 can water chestnuts, sliced

Sprinkle rice in 9 x 13 inch pan. Cover with broccoli. Layer chicken over broccoli. Spread sliced cheese over chicken, pour mayonnaise and mushroom soup (combined) over cheese. Sprinkle water chestnuts on top. Bake at 350 degrees 35 to 45 minutes. Place onion rings on top and bake 15 minutes longer.
