PINA COLADA CRUSTLESS PIE WITH
EQUAL
 
6 eggs
2 env. unflavored gelatin
2 tbsp. butter, melted
2 1/2 c. skim milk
8 packets Equal
2 caps coconut extract
1 cap rum extract

TOPPING:

1 can (8 oz.) dietetic crushed pineapple
2 packets Equal

In blender, combine eggs, gelatin and butter. Blend on low speed about 30 seconds; scrape down sides. Heat milk to boiling. Cover blender, start motor, remove cover, and add hot milk slowly. Blend 10 seconds.

Add 8 packets Equal and extracts. Blend again. Spray a 9 inch glass pie plate with vegetable spray. Pour filling into pie plate and refrigerate until firm, about 6 hours.

Mix pineapple and 2 packets Equal in a small bowl. Before serving, spoon topping over pie and spread evenly.
