SUNDAY ROAST BEEF 
1 beef roast, about 2 lb. (can be frozen)
5 carrots, peeled & halved lengthwise
5 potatoes, peeled & quartered lengthwise
1 pkg. dry onion soup mix
2-3 c. water
2 whole allspice, optional

When you're getting ready for church, about 8:30 a.m., place roast in a roaster and put in 400 degree oven for 1/2 hour, don't cover. At 9:00, mix soup mix and water; pour over the roast. Add the carrots and potatoes around the meat. Put the allspice on top of the meat. Cover the roaster and turn the oven down to 250 degrees.

Go to Sunday School and Church. When you come home, put the roaster in the middle of the table and enjoy. You can make gravy out of the drippings in the roaster if you wish. (Remove any fat and add flour, water and seasonings to taste, cook until thick). The roast should bake at 250 degrees for about 3 hours, more if a larger roast is made. Dean calls this "Boiled Dinner" and it's our Sunday favorite. Serves 5.
